Chinese New Year

Here's a collection of Chinese New Year recipes that I gleaned over the years!
My Mother's Peanut Cookies
Growing up I remembered munching these delicious morsels. I recently got this recipe from mum (snapshot of her handwritten page). I am excited to try it for CNY 2021 :)

Ingredients (Yields 60):
500g peanuts- shelled and skins off, 300g sugar, 500g flour, 200g butter, a pinch of salt, and a pinch of baking soda. An egg yolk for wash

1. Toast the peanuts.  Blitz them in the food processor until fine or crumbly
2. Preheat the oven to 170 degC / 340 degF
3. In a large mixing bowl, mix softened butter and the rest of the ingredients
4. Knead the dough until incorporated. Pinch off dough to form an inch size ball. Shape to perfect balls
4. Line a baking sheet with parchment paper. Place the peanut balls on the sheet. Brush egg yolk wash on the balls
5. Bake the cookies for 15 mins or until they are cooked through
6. Serve with your favorite beverage
Yee Sang 
In 2018, I've decided to make my own yee sang. Here's a couple of pictures of the results. I procured the freshest fruits and veggies that I could get my hands.

Ingredients (serves 6 to 8): 
A small pomelo, 1 green apple, 1 red apple, 1 lemon, 1 pear, 1 carrot, 1 cucumber, 1 daikon, 1 small jicama, 0.5 cup toasted and crushed peanuts, 1 cup fried wonton chips, 2 tsps Chinese five spice powder, a pinch of salt, ground white pepper, 2 heaping tbs plum sauce, 2 tsps toasted sesame seeds, 1 small purple cabbage and 1 pack of smoked salmon. Pickled ginger and cilantro optional.

1. Shred all the fresh veggies and fruits. For fruits that oxidize (brown quickly), quickly soak them in water squeeze with a few drops of lemon juice
2. Gather a cup of each veg and fruit
3. Find the largest round serving platter. Assemble the fruit and vegs around the platter, ensuring the colors are appealing and balanced
4. Pile up the smoked salmon in the center. Sprinkle the cilantro 
5. In smaller plates, set aside the dry ingredients, plum sauce, a few slices of lemon wedges, peanuts and sesame seeds
6. Distribute chopsticks to your fellow mates. Appoint the lead cheer leader to cheer on the Yee Sang phrases while tossing all the ingredients high and merrily!
