Chinese Sausage Omelette

This is probably one of my favorite dishes to eat when growing up. It's very simple to make and tastes delicious.

Ingredients (Yields 2 servings):

3 large eggs, 3 sweet Chinese sausages, 1 small onion, 1 tsp oil and ground black pepper to taste

Procedures:

1. Chop onion. Remove sausage casings and slice sausages

2. Beat eggs and season with ground black pepper

3. Heat a pan over medium heat. Add 1 tsp oil, onion and Chinese sausages. Stir until sausages turn slightly crispy at the edges and cook through

4. Pour in egg mixture and distribute the sausage evenly. Cook for 3 to 5 mins until the bottom of the omelette is firm. Flip the omelette and cook the other side until the egg does not run

5. Serve over rice with Sriracha dipping sauce

Egg Drop Soup

Classic soup in Chinese restaurants.

Ingredients (Yields 2 to 3 servings):

2 fresh eggs, 1.5 cups water, 1 chicken bouillon, 0.5 cup frozen corn kernels, 1 tbs fried shallots and cornstarch slurry (1 tbs water and 1 tsp cornstarch)

Procedures:

1. Heat water and bouillon in a saucepan over medium heat

2. When boiling, add frozen corn kernels and shallots. Boil for 5 mins. Add cornstarch slurry

3. Break and lightly beat eggs. Pour in the broth and remove from heat

4. Stir gently until eggs are cooked

5. Top with fresh scallions and serve in bowls
