Tandoori Chicken Recipe

My parents shared their recipe to their kids... and here I am, posting it up for your benefit :)

Ingredients:

2 cups full fat yogurt

6 garlic cloves, minced

1 knob ginger, grated

1 tsp turmeric

1 tsp paprika

2 tsp garam masala spice blend or curry powder

Salt to taste

1 chicken, cut into 10 pieces

Fresh cilantro as garnish

Procedures:

1. For the tandoori marinade, mix the yogurt, garlic and spices in a large bowl. Season with salt and whisk well

2. Add the chicken pieces into this marinade mix, refrigerate for at least 3 hours or overnight.

3. When ready to cook, preheat your oven to its highest setting

4. Remove the chicken from the marinade and place on a rack set over a baking sheet

5. Roast in the oven until the chicken is cooked through, about 20 minutes

6. Garnish chicken with fresh cilantro. Drizzle butter sauce and serve with rice or naan

Butter sauce:

1 small can of whole tomatoes

1 cup whipping cream

2 tsp garam masala

Zest and juice of 1 lemon

2 chili peppers

3 tbsp grated ginger

1 small bunch of fresh cilantro

Salt

½ cup (or 8 tbsp) butter

Procedures:

1. Puree the tomatoes, cream, garam masala, lemon zest and juice, chilli peppers, ginger, cilantro and salt in a food processor

2. Melt the butter in a small saucepan. When it begins to foam, swirl it around it browns lightly

3. Stir in the tomato mixture and heat it through

4. Drizzle over the tandoori chicken and serve immediately
