Lamb Recipes

I love lamb. Here are a number of recipes that I love to use while cooking lamb.

Grilled Lamb Chops

Ingredients:

2 lamb chops (0.5 inch thick)

2 dashes of Worchestershire sauce

Seasonings, 1 tsp each: dried basil, garlic powder, freshly grounded black pepper and salt. Optionally, you can use standard Italian seasonings

Procedures:

1. Trim excess fat from lamb chops

2. Sprinkle seasonings on the lamb chop

3. Heat grill pan over medium heat

4. Spray some oil

5. When you see a slight smoke, place the chops in the pan (you'll hear some sizzle!)

5. Cook for 3 mins per side

6. Remove the chops from heat and let them rest before diving into them

Avocado Salad Recipe

Ingredients:

Half of avocado, sliced

One serving of your favorite greens

Your favorite dressing

Procedures

1. Place avocado slices on a bed of greens

2. Toss the greens and avocado slices with your fav dressing

Lamb Curry

Ingredients:

2 lbs lamb chunks, 2 tbs Adabi curry powder, 2 tsps chili flakes, 1 tsp turmeric powder, 1 tsp ground ginger, 1 tsp chili powder, 1 can coconut milk (400 ml), 400 ml water, juice of 1 lemon, 4 shallots, 4 garlic cloves, 2 large Rusett potatoes, and 1 tbs veg oil. Salt or soy sauce and ground black pepper to taste

Requires marinating for 2 hours minimum

Procedures:

1. In a large mixing bowl, mix chili flakes, turmeric powder, ground ginger, chili powder and lemon juice. Marinate lamb chunks in the spice mixture. Cover and let it rest for at least 2 hours or overnight

2. Cut potatoes to cubes. Boil the potato cubes in a pot of boiling water. Cook for 10 mins or until the cubes are fork tender. Drain and set the cubes aside

3. Crush shallots and garlic

4. In a skillet over medium heat, add oil, shallots and garlic. Stir until the garlic turns brown. Transfer shallots, garlic and potatoes in a crock pot

5. Using the same skillet, sear lamb chunks both sides. Add the browned chunks in to the crock pot

6. Pour coconut milk in the same pot. Use the same can to fill up with water and pour in the crock pot. Sprinkle curry powder and ground black pepper. Stir to blend well

7. Cover and turn the crock pot t0 HIGH. Let it cook for 10 mins and then reduce the temperature to LOW. Let it cook for 7 to 8 hours

8. The curry is cooked when the curry thickens and the meat separates from the bone. Season with salt or soy sauce to taste

9. Serve with rice or Indian breads

Tips: You can opt to cook over the stove for 3 to 4 hours. This recipe works for other meats like goat, beef or chicken
