Spaghetti with Oil, Garlic, and Chilies

This is probably my favorite pasta to date... spicy, garlicky, and flavorful. I eyeballed the ingredients so hopefully it would come up good for you. You can replace grape seed oil with olive oil. If you like mild spice, remove the chilies.

Ingredients (Yields 6 to 8 servings):

4 quarts water, 1 lbs dried thin spaghetti, 1 healthy bunch of fresh kale, 8 garlic cloves, 1/3 cup grape seed oil, 1/3 cup olive oil, 1 tbs sesame oil, 2 tsps dried chili flakes, 3 Serrano peppers, 0.5 cup walnuts, freshly grated Parmesan cheese, and salt and ground black pepper to taste

Procedures:

1. Slice garlic cloves and Serrano peppers thinly

2. Rinse kale and remove stems. Cut to strips

3. In a large pot, bring water to a boil. Season with salt and add kale. Blanch for a minute, scoop out the kale and quickly rinse under cold water. Drain and set it aside

Turkey Farfalle Alfredo

My landlord made this and I thoroughly enjoyed it. It's packed with dairy so to all lactose intolerants, beware!

Ingredients (Yields 6 to 8 servings):

4 quarts water, 4 cups dried farfalle, 1 lb ground turkey, 2 cloves garlic- chopped, 1 onion- chopped, 0.25 cup butter, 1 cup heavy cream, 1.5 cups freshly grated Parmesan cheese, 1.5 cup peas, 1 cup cherry tomatoes- cut to halves,1 tsp dried parsley, 1 tsp dried basil, 1 tsp dried chili flakes, olive oil, salt and pepper to taste

Procedures:

1. In a large pot, bring water to a boil. Season with salt and add dried farfalle. Cook pasta till fork tender. Drain and toss pasta with some olive oil to prevent from sticking to each other

2. In a large skillet over medium heat, add olive oil, chopped garlic and onion. Fry until translucent. Add ground turkey and cook through and drain excess oil. Set aside the cooked turkey mixture

3. In the same skillet over low heat, melt butter and add cream and let it simmer. Whisk in cheese quickly, heating the sauce through

4. Add the cooked turkey mixture, peas, cherry tomatoes and dried herbs and chili flakes in the sauce. Let the mixture simmer for 10 mins, stirring occasionally

5. Stir in the pasta and season with salt and pepper

6. Serve while it is hot

4. According to the directions on the pasta box, cook pasta in the same pot of water

5. In a saucepan, add oils, garlic, chilies, and ground black pepper. Stir occasionally over low heat. Remove from heat when the garlic slices turn slightly brown and do not look raw (about 8 minutes)

6. When the pasta is cooked, reserve 1 cup of pasta water. Drain pasta. Add back into pot

7. Add kale and spicy garlic oil in the pasta. Toss them together

8. Roughly chop walnuts and toast for a few minutes, ensuring they are not burned

9. Sprinkle cheese and walnuts in the pasta. Serve while it is warm
