Pulled Pork and BBQ Sauce

People have been telling me that it's quite easy to make pulled pork and BBQ sauce. I used a slow cooker to save time and minimize effort. It turned out great :)

Pulled Pork

Ingredients (Yields 8 to 10 servings):

7 lbs pork roast, 1 tbs chili powder, 1 tbs ground black pepper, 2 medium onions, 1 cup water, 2 tbs lemon juice, 2 tsp brown sugar and 3.5 cups BBQ sauce

Procedures:

1. Trim fat and remove bone from pork roast. Cut pork roast to fit a slow cooker (5 to 7 quarts)

2. Season the meat with chili powder and black pepper

3. Cut one onion to quarters. Peel the layers and arrange them at the bottom of the slow cooker

4. Place the meat on the onion- this prevents meat from burning. Add water and cover the cooker

5. Set to HIGH and cook for 4 hours or until the pork roast is cooked

6. Remove the meat using a pair of tongs in to a large bowl. Discard cooking liquid

7. Using two forks, pull the meat apart to strips

8. Chop the other onion. Mix it in the meat

9. Incorporate BBQ sauce, lemon juice and brown sugar

10. Place the mixture back in the slow cooker and cook for another 2 hours at LOW

11. Sandwich pulled pork between hard rolls, hamburger buns or thick slices of whole grain bread. Serve with leftover BBQ sauce

BBQ Sauce

Ingredients (Yields 3.5 cups):

2 cups ketchup, 1 cup water, 0.5 cup apple cider vinegar, 5 tbs brown sugar, 5 tbs white sugar, 0.5 tbs molasses, 0.5 tbs ground black pepper, 0.5 tbs onion powder, 1 tbs lemon juice, 1 tbs Worcestershire sauce, a few dashes of hot sauce and 2 drops of liquid smoke

Procedures:

1. In a medium saucepan over medium heat, combine all ingredients and bring the mixture to a boil

2. Reduce to low heat and let it simmer for 1 hour or more until sauce thickens, stirring frequently

3. Remove from heat and store in a dry, tightly sealed bottle
