Gluten Free Alternatives

Gluten allergy is a serious condition that affects many people. Severe cases such as celiac disease can link to weight loss and nerve damage. This webpage contains resources and alternatives to recipes that are traditionally made with gluten-rich ingredients such as wheat, rye, barley, couscous, and semolina.

Dumpling Wrappers

Ingredients (Yields 30 pieces):

1 cup tapioca starch, 1 cup white rice flour, 1 cup boiling water, 2 tablespoons olive oil, and 1 cup glutenous rice flour to dust

Procedures:

1. Mix tapioca starch and white rice flour in a large bowl

2. Pour in boiling water and mix the dough until all flours are incorporated. At this point, the dough will be very sticky and hot, and unable to be worked by hand.

3. When the dough is cooled enough to handle, mix in 0.25 cup of glutenous rice flour at a time, knead the dough by hand, until the surface is smooth and malleable. Add more glutenous rice flour if needed.
