Guinness Shepherd's Pie with a twist
Most shepherd's pies I've tried are either too salty or too runny. I've decided to make my own version by adding ground turkey and Asian ingredients.
Ingredients (Yields 8 servings):
1 bottle of Guinness Stout (14.9 fl oz), 2 tsp Worcestershire sauce, 1 tsp oyster sauce, 2 lbs ground turkey, 2 onions, 6 garlic cloves, 6 dried shiitake mushroom, 1 cup water, 2 cups frozen vegetables, 1 tbs oil, 0.5 tsp of ground cumin, 0.5 tsp ground cloves, 0.5 tsp chili powder, 0.5 tsp dried oregano, 0.5 tsp dried basil, 0.5 tsp paprika, 2 tsp molasses, 0.5 cup pasta sauce, 1 tbs corn starch, 2 lbs Russet potatoes, half a stick of butter, 1 tbs milk, few shavings of cheddar cheese, 1 tbs Parmesan cheese, and ground black pepper and salt to taste
Procedures:
1. Soak dried shiitake mushroom in 1 cup of water
2. Peel potatoes and cut to large cubes. Bring a large pot water to a boil. Add potatoes and salt. Cook until potatoes are softened. Drain when done
3. While the potatoes are boiling, mix Guinness stout, Worcestershire sauce, and oyster sauce in a small saucepan. Heat mixture over medium heat and let it boil until it is reduced by half
4. Chop onions and garlic cloves finely. Squeeze water from mushroom and reserve liquid. Add liquid into the Guinness mixture. Slice mushroom to bite size
5. In a large pan over medium heat, heat oil. Add onions and let it softened. Stir in ground turkey, garlic, mushroom, and all the spices and dried herbs. Brown the meat. Incorporate frozen vegetables, molasses, and pasta sauce
6. While the meat is browning, mash potatoes with potato masher or ricer. Mix together butter, milk, and cheeses. Set aside
7. Remove Guinness mixture from heat. Whisk in corn starch. Add the liquid into browned meat mixture and let the meat mixture thicken (takes about 15 minutes). Remove from heat
8. Preheat oven to 350 degF. Spoon and spread meat mixture into a 4 quart oven-proof baking dish. Top with mashed potatoes evenly
9. Bake for 30 minutes or until potatoes turn golden
10. Serve with more cheese shavings, ground black pepper or a slice of crusty bread hunk
