Vietnamese Inspired Pork Steaks
I took the liberty to substitute fish sauce with soy sauce since I don't really like the former much. Instead of grilling the steaks, I baked them and thus eliminated the need for oil- my attempts to create a healthier recipe. This recipe works with beef steaks too.
Ingredients:
4 pork steaks - 0.5 inch to 1 inch thick, 0.25 cup brown sugar, 0.125 cup rice vinegar, 0.125 cup soy sauce, 1 tbs freshly ground black pepper, 0.5 tsp ground ginger, 0.5 tsp ground chili pepper, and 2 crushed garlic cloves
Procedures:
1. Trim excess fat from steaks. Rinse and pat dry
2. For the marinade, mix brown sugar, rice vinegar, soy sauce, garlic, and dried spices in a small bowl
3. Place pork steaks in a durable plastic bag or container with lid. Pour and massage marinade into the steaks. Let steaks sit in the marinade for an hour at room temp or overnight in the fridge. Flip steaks occasionally
4. Preheated oven to 400 degF
5. Line baking sheet with Al foil or lay grill on a baking sheet
6. Lay room-temperature marinated steaks flat on grill or baking sheet. Place them in the oven. Reserve leftover marinade
7. Bake steaks for 30 mins. Flip to the other side and continue to cook for another 15 mins or until cook through. Remove from oven and let them rest
8. In a saucepan over medium heat, boil leftover marinade until syrupy
9. Serve pork steak with sauce drizzled over it and with your favorite sides :)
