Toad in the Hole
After watching my brother-in-law made this dish for years, I've decided to try my own "healthier" version. I reduced the amount of grease by using cooking spray and omitted the sugar.
Ingredients (Yields 4-6 servings):
1 package of Costco Kirkland bratwurst (7 sausages), 4 eggs, 3/4 cup milk, 1 cup and 2 tbs flour, 1 tbs water, a pinch of salt and oil from spraying can.
Equipment: 9x12inch baking pan or dish
Procedures:
In a mixing bowl, whisk eggs, milk, flour, water and salt until the batter is smooth and not lumpy. Let it rest for 30 minutes
Grease baking pan with oil with cooking spray. Place the bratwurst in the pan and lightly grease with oil
Brown the sausages under the oven's broiler at 425 degF for 3 minutes. Flip them and brown the other sides for another 3 minutes
Take the pan with the sausages out of the oven. Take the sausages out onto a plate while keeping the hot grease in the pan
Pour the batter in the hot grease. Quickly distribute the sausages in the batter. Place the pan back in the oven
Bake for 15 mins or until the batter is puffy, the edges are crisp and the sausages cooked through
Take the dish out from the oven. Let it cool and serve with your favorite gravy!
