preserved tomatoes
My coworkers have been sharing their homegrown tomatoes. Since I couldn’t use much in one seating, I’ve preserved them.
My preservation method :
Wash the tomatoes from grim and removing the stems while bringing a pot of water to a rolling boil.
Place tomatoes in the hot water for a couple of minutes (blanching).
After blanching, place tomatoes in cool water for a few minutes.
Peel and remove skins and any bruise marks on tomatoes while sanitizing a clean glass bottle in hot water. Dry the bottle.
Place whole tomatoes (cut halves if can’t fit through the bottle's opening) in the sanitized bottle.
Cover and let them tomatoes cool before placing in fridge or freezer for future use.
